Now that fall is in full swing, pumpkin-flavored food and beverages seem to be everywhere you look. However, none is as symbolic of the season as pumpkin pie. This classic Thanksgiving dessert is most popular in America and Canada and has deep roots in U.S. history. Here is a brief overview of how it originated and turned into a staple during the holidays.

The Early Years 

Pumpkin cultivation dates back to 5,500 B.C., when it first took place in Central America. This member of the squash family is one of the earliest foods European explorers discovered and brought back with them to the New World in the 1500s. Shortly after, pumpkins became a common crop in England and were used in a variety of recipes, including stuffed pastries.

By 1621, it’s believed early settlers of the Plymouth Colony were stewing pumpkins or filling the hollowed-out shell with milk, honey, and spices before baking it in a fire.

In 1653, a French cookbook was released with a recipe for “Tourte of Pumpkin,” which featured a pastry shell, and English cookbooks soon followed in the 1670s with recipes for “pumpion pie.” 

Today’s Thanksgiving Tradition

piesThe earliest known American cookbook, authored by Amelia Simmons, was published in 1796 and offers the first pumpkin pie recipe similar to the modern-day version. Although Thanksgiving isn’t specifically mentioned, the pie recipe accompanies instructions on stuffing a turkey.

It was during this same period that Thanksgiving began transitioning from a religious holiday to one that focuses on feasting with family. By the 19th century, pumpkin pie had become a traditional dish served on Thanksgiving.
