Commercial fryers need regular maintenance and cleaning to stay in smooth working order. However, cleaning your commercial fryer is an understandably daunting task. Do not worry, as most of what you need can be found at your restaurant supply store. Here are three tips that will help you know when it’s time to clean your fryer and how to do so properly.

3 Tips for Cleaning a Deep Fryer

1. Watch the Color of Your Oil

restaurant supplyDeep fryers usually need at least one thorough deep cleaning a month. If you use your fryer a lot, this may be required more frequently. Keep an eye on the color of your fryer oil. When it starts to smell, or turns a darker color, clean it before it begins affecting the taste of your food.

2. Use the Right Products

Cleaning the fryer entails removing all of the cooking oil, replacing it with the correct fryer cleaner and water, and then boiling that mixture. It’s important only to attempt this with the correct products, as not all kitchen cleaners can be used in your fryer. A restaurant supply store will carry the right products. You will need fryer cleaner for the inside, and a powerful degreaser and cleaner for the outside.

3. Don’t Mix Oil & Water

After you boil out and clean your fryer, be sure to remove any grease splatters on the machine or on the surrounding floor area. It’s essential that you let all pieces of the fryer thoroughly dry before reassembling or attempting to use it. Any leftover water in the machine can cause a violent reaction when you heat the oil, which can explode, spit, or spatter hot oil. This is not only risky for your employees but can also cause damage to the machine. If your machine becomes damaged, head to a restaurant supply store for a repair.
