From French fries to fried chicken, there are many uses for commercial fryers in the restaurant business. As with other restaurant equipment, they need consistent cleaning and maintenance—not only so they will continue to function properly, but also to ensure food safety and quality. Here’s a closer look at your responsibilities in maintaining this popular piece of cooking equipment.

Daily Cleaning

For safe operation and general cleanliness, commercial fryers should be cleaned every day. To get started, the fryer should be disconnected from the power supply and have the pilot light turned off. Let the oil cool.

Wipe off any oil on the rim, and use a dishcloth or brush to scrub the basket and screen in soapy water. Use soap that fights grease to remove all buildup. Let it dry completely.

Long-Term Maintenance

Every week, you should perform what’s known as a “boil out.” During this process, the oil is allowed to cool and then entirely drained from the deep fryer. Remove any food waste within the fryer and rinse the interior with hot water. Next, scrub the inside to remove stuck-on debris before rinsing again.

Finally, fill the fryer with water and a non-caustic degreaser or boil out product up to the unit’s oil level line. Allow the fryer to boil for approximately 20 minutes. Once the water has cooled, slowly drain it from the fryer, while being careful not to let any water get in the filter tanks. A final rinse will leave the equipment completely clean and ready for future use. An annual inspection by a commercial fryer maintenance professional should also keep the machine running smoothly.
