YUMMY YAM CHIPS:

Ingredients:

1 medium- large yam

1.5 tbs coconut oil

½ – 1 tsp Kaiulani Spices Exotic Curry Seasoning*

Sea salt and black pepper to taste

*Kaiulani Spices is a local Hawaii company, available from health food stores. If you don’t live in Hawaii, you can use any of your favorite condiments, such as curry spice, turmeric, powdered ginger, cumin or a combination of these.

Instructions:

  1. Pre-heat oven to 375 degrees Fahrenheit.
  2. Cut yam into thin slices.
  3. Place yams in Ziploc bag, add coconut oil and spices and shake bag, to make sure that the yam slices are covered with oil and spice.
  4. Once the oven temperature is ready, remove yam slices from ziplock bag and place on a baking sheet and bake for 10 – 15 minutes each side. **

**Because the cooking time will vary according to the thickness of the yam slices, I suggest that you check after 10 minutes and see if the chips are ready to be turned over. Once you turn them over with a spatula or chopsticks you do the same – check after 10 minutes.

These ingredients serve 2 – 3 people, and you can definitely increase the quantity, if you’d like to make more.

Yams offer a good source of Vitamin C, B vitamins (especially B6), fiber, potassium and manganese.
