The story of curry dishes stretches back thousands of years; in fact, the first instances of these saucy, sometimes spicy vegetable and meat dishes can be traced to the prehistoric people of the Indus Valley. It’s certainly come a long way since then and has become a beloved staple of Thai cuisine. Keeping up this tradition while making it as exciting and delectable as ever is what the chefs do at Thailand Cuisine, with locations in Kihei and Kahului, Hawaii, and these dishes are among the many reasons that people come back to these beloved eateries.

So what kinds of curry does Thailand Cuisine serve? Let’s check them out:

  • Red Curry: Like all curries, this Thai classic features a choice of chicken, beef, pork, shrimp, or fish cooked with vegetables in a thick, house-made sauce and served over rice. The red color comes from dry red spur chilies, which are accented with a range of spices including garlic, galangal, and cumin, among others.
  • Green Curry: Native to central Thailand, this type is also named after its color, which is a result of the green chilies used to make it. Its thick broth is derived from coconut milk, and it comes in the same range of meat or fish options. This one is known to be a little more pungent than the red varieties.
  • Matsaman Curry: What’s interesting about Matsaman curries, which are known to be somewhat milder, is that they are a Thai take on a Persian dish, having been first recorded in the cosmopolitan court of Ayutthaya in the 17th Century. It features spices not seen in other curries like cinnamon, cardamom, cloves, and nutmeg.
  • Panang Curry: Known as the mildest of the bunch, Panang curry’s spice mixture is combined with a choice of meat or fish and cooked in thicker types of coconut milk. Fish sauce and kaffir lime leaves accent this delectable option.
