A Guide to Steak Doneness

1. Rare

A rare steak is the least-cooked level, where the meat is just quickly cooked on each side. The meat in the center is left red, with a browned outside. This is the most tender and juicy option and is best for leak steak cuts.

2. Medium Rare

Medium rare tends to be the most popular option at a restaurant, so if you’re new to steak, this might be a good place to start. These are cooked slightly longer, so the middle of the meat is warm. The center ranges from pink to red, with a seared outside.

3. Medium

4. Medium Well

This steak is mostly grey-brown all the way through, and may have a small hint of pink at the very center. The meat becomes dry as more of the water evaporates and the fat leaks out, so this is ideal for fattier cuts.

5. Well

A well-done steak is brown all the way through with a charred exterior. The meat should be cooked slowly so it doesn’t get too tough, but it still tends to be chewier and dryer than most people like. A T-bone steak is the most popular option for this doneness level, since it has more fat and can handle a slow cook.
