How to Grill Gourmet Sausages

1. Wait Until They’re Room Temperature

To ensure the sausages cook evenly, allow them to reach room temperature before throwing them on the grill. Due to their size and shape, this will usually take about half an hour or so. Although this may seem a little inconvenient to plan, it ultimately cuts down on how long they’re on the grill. 

2. Only Score Pre-Cooked & Smoked Sausages

Furthermore, as the fat hits the grill, it causes the heat to flare up, which leads to too much charring.

However, with pre-cooked or smoked sausages, it’s not much of a problem since the pieces are firmer and the fats are less likely to drip out. Scoring them will also help them cook faster.

3. Poach First 

For fresh gourmet sausages, try poaching them over low to medium heat before placing them on the grill. This technique helps them cook more evenly and makes them more tender.

You can use any cooking liquid, such as water, beer, wine, or chicken stock, in the process. Place the sausages in a pot, and use just enough liquid to cover them. Wait patiently until the sausages reach 150 °F. Then move them to the grill and cook them on low-to-medium heat until they reach 160 °F.
