Throughout the U.S., different regions have different culinary traditions. This is wholly evident when it comes to barbecue sauces, which vary wildly from state to state. The following sauces have gained nationwide acclaim despite their humble beginnings, and are definitely worth sampling the next time you visit your favorite barbecue restaurant.

What Are Some Popular Regional Barbecue Sauces?

1. Texas-Style Mop Sauce

As the name implies, this sauce is applied via a mop, which ensures the sauce saturates every part of the meat being cooked. In addition to adding unbeatable flavor to meats like brisket, it also causes the meat to become moist and tender while it cooks. While recipes vary quite a bit, mop sauces usually include vinegar, Worcestershire sauce, and beef stock, as well as salt and pepper. One major proponent of Texas-style mop sauce was Walter Jetton, AKA the King of Barbecue. He was even Lyndon B. Johnson’s go-to choice for Whitehouse pitmaster.

2. Alabama White Sauce

barbecueAlabama white sauce strays even further from the beaten path when it comes to conventional barbecue sauces. This sauce includes a curious combination of mayonnaise, vinegar, and pepper. It’s typically served on the side, which makes it ideal for dipping. While it tastes amazing on chicken, it can also be used on pork. This creamy sauce was invented by Big Bob Gibson of Decatur, AL, who was a famous local restaurateur known for his homey, down-to-earth recipes.

3. Eastern North Carolina Vinegar Sauce

Straying away from the common practice of using tomato to create savory sauces, Eastern North Carolina vinegar sauce uses a rather simple, yet tasty recipe. This sauce is made from cider vinegar, hot sauce, cayenne, crushed red pepper, and black pepper. Typically used for whole-hog roasts, this sauce is known for its tangy, acidic flavor that gives a real kick to whatever it's used on.
