Known for a crisp and refreshing combination of romaine lettuce, anchovies, croutons, raw eggs, Dijon mustard, various cheeses, olive oil, lemon juice, and black pepper, the Caesar salad is a popular option in many restaurants. Even if you regularly order this classic salad, you may not be aware of its history. Here’s what you should know about the creation of this dish.

Origins

Caesar Cardini was born in Italy and emigrated to the U.S. around the time of WWI. In addition to running a restaurant in San Diego, Cardini also ran one in Tijuana so that patrons could enjoy alcoholic beverages during the Prohibition Era. 

While the story has been disputed, it’s claimed that Cardini came up with the recipe on a busy July 4th. Woefully short on ingredients, Cardini was said to have combined what was left in the kitchen to concoct the classic Caesar salad as it’s known today. Other versions of the story claim the actual creator was Caesar’s brother Alex Cardini, who referred to the concoction as Aviator’s Salad in honor of the U.S. airmen it was served to. 

Modern Variations of Caesar Salad

restaurantWhile it’s definitely an established classic, many chefs have put their own spins on the Caesar salad. Adding kale or spinach along with romaine lettuce offers a boost of fiber and nutrients. Some chefs even lightly char the romaine lettuce for an intensely smoky flavor. 

Other recipes include added proteins, such as chicken, salmon, or shrimp. Avocado, asparagus, or Brussels sprouts have also been added to some versions. Homemade croutons are another possible addition, which can be quite tasty when adding herbs like rosemary and thyme.
