On hot summer evenings, knowing a few refreshing drinks you can order at happy hour to quench your thirst is key to enjoying the night out. Luckily, there is an endless selection of cool and delicious cocktails to choose from. Learn more about a few favorites and how to enjoy them properly.

A Guide to Popular Summer Cocktails

1. Tom Collins

This classic cocktail was first documented in 1876 and has been popular ever since. The original recipe in Harry Johnson’s 1882 book, “New and Improved Bartender’s Manual or How to Mix Drinks of the Present Style” calls for 3/4 tbsp of sugar, 3-4 dashes of lime or lemon, broken ice, a full wine glass of gin and plain soda water to taste. This results in a spiked “lemonade” flavored drink that’s cold and tangy.

2. Margarita

Americans have been enjoying tequila ever since turning to Mexico for their drinks during Prohibition. Classic margaritas bring together both sweet and tart flavors by combing one lime wedge, crushed ice, 1 ounce of lime juice, and 3 ounces of your tequila of choice.

The ingredients are blended together, and the rim of the glass is served with salt. This ice-cold drink is a perfect way to start a happy hour after a day in the sun.happy-hour-lincoln

3. Mojito

This traditional Cuban drink originated in Havana and was popularized in the U.S. by author Earnest Hemingway. The recipe calls for mint leaves and a single lime wedge pressed into a glass.

The ingredients are crushed, then more lime wedges and 1 tbsp of sugar are added. Next, white rum is poured over the pressed mint leaves and lime juice. The remainder of the glass is filled with club soda, resulting in a refreshing mint flavor complemented by citrus and sweetness.

4. Moscow Mule

The Moscow Mule is a quintessential summer brunch drink. The drink was allegedly invented circa 1941 in Los Angeles and consisted of only vodka, spicy ginger beer, and lime juice.

Moscow Mules are traditionally served in a copper cup —requiring 1 ½ fluid ounces vodka, ½ fluid ounce lime juice, 1 cup ice cubes
½ cup ginger beer, and 1 lime wedge for garnish. The cocktail is normally poured into the copper cup and stirred before dropping the lime wedge in for garnishing.
