Grease fires are a risk in kitchens and can cause extensive damage without the proper equipment and training. However, preventing them is relatively simple. From keeping the right fire extinguishers on hand to monitoring hot oil closely, here are some of the most effective ways to avoid grease fires in your restaurant.

Do:

Use a lid to prevent spills.

Whenever you cook with oil, cover the pot or pan with a fitted lid to keep droplets from splattering onto the surrounding surfaces. If you have to stir the contents, do so gently, and replace the cover when you finish. This confines the grease to one area and prevents a fire from spreading during an emergency.

All kitchens should have Class K fire extinguishers to put out grease fires. These special extinguishers contain a wet chemical that smothers the flames, whereas a standard one spreads the grease around. Make sure there is one within reach of every stovetop, and train all staff members on how to use these devices properly. You should also have a certified technician inspect them regularly to ensure they are working.

Don’t:

Leave hot oil unattended.

Once the oil starts smoking, it takes less than 30 seconds for flames to ignite. In other words, you risk a significant grease fire if you leave the stove for less than a minute. Make sure all employees understand the importance of monitoring oil while it’s cooking. If they need to leave the area, someone must replace them.

Use water to douse the fire.

Once a fire starts, many people assume they should use water to put it out. However, if you toss liquid onto a grease fire, it will splatter the grease and spread the flames even farther. If you don’t have a Class K fire extinguisher within reach, smother the oil with baking soda or salt to lower the fire.
