What Are Some Varieties of Sausage to Try?

1. Polish

A well-known variety of meat, Polish sausage comes in both small and large sizes and can be purchased smoked, dried, or fresh. Comprised mainly of pork, and occasionally beef, it is typically seasoned with garlic, cloves, marjoram, and smoke. It’s best prepared when grilled or smoked and can be paired with something tangy like sauerkraut to balance out its subtle notes.  

2. Goetta 

A popular German sausage, Goetta is made from ground pork or a combination of pork and beef and is combined with grains to form patties. This meat is soft in texture, with seasonings like coriander, marjoram, white pepper, cloves, and ginger, providing a unique sweet and savory taste. Goetta is most commonly served as breakfast sausage, alongside eggs and toast.

3. Beer

meatOriginating in Bavaria, beer sausage is made up of pork and beef and is both cooked and smoked. A dark red color, beer sausage has a garlicky flavor and is seasoned with paprika, mustard seeds, and black peppercorns. Contrary to its name, it doesn’t actually contain any alcohol and is usually cut into slices and then served cold on bread while enjoying a beer.

4. Mett

Another German sausage variety, metts contain varying ratios of beef, pork belly, bacon, or even turkey. Metts are smoked for hours, allowing spices like garlic, pepper, caraway, and marjoram to infuse the meat, providing a strong flavor. Since they have a firm texture, these sausages are excellent in soups, casseroles, or served as a main course with cabbage or kale.
