1. Polish Kielbasa

When grilling, the goal is to cook the sausage through evenly, with nice grill marks on both sides. Start by setting your grill on medium heat. Oil the grate when it begins to heat up, then set down your meat. Cover the grill and cook for about four minutes on each side.

2. Ukrainian Kielbasa

Ukrainian kielbasa, pronounced “kovbasa” in Ukraine, typically contains minced pork, beef, and spices. The casing crisps up nicely on the grill, wrapping the seasoned meat in a pleasant crunch. Ukrainian kielbasa should be treated similarly to Polish sausage. Just be sure not to overcook it, or you’ll lose the juicy, peppery flavoring.

When finished, the internal temperature should reach about 140 degrees.

5. Veal Franks

These specialty meats are a tender, low-fat, and flavorful alternative to pork hot dogs. Like hot dogs, they require a bit more attention on the grill. Set your grill on medium-low, then place your franks perpendicular to the grate to achieve even grill marks. As they cook, use a pair of tongs to roll them back and forth to ensure even heating.
