This dish is thought to have originated from Italian immigrants who relocated to South America in the 1800s.

Texan Influence

Chicken-fried steak was introduced to Texas by German and Austrian immigrants in the 19th century and was inspired by the Austrian dish wiener schnitzel—pork dipped in eggs and breadcrumbs, and then fried. The goal was to make tough, affordable pieces of meat enjoyable.

One legend tells that short-order cook Jimmy Don of Lamesa, TX, invented chicken-fried steak by accident by mixing up orders in his restaurant; a pig stand in Dallas claims that they created the dish when they opened in 1921. Recipes for the Texas version surfaced in the 1800s, though the term “chicken-fried steak” didn’t appear until 1914 in the Colorado Springs Gazette.
