What Are the Most Popular Types of Kebabs?

1. Koobideh

Koobideh kebabs originated in Iran. They are traditionally prepared by placing meat on a slab and flattening it with a wooden mallet. Most koobidehs feature beef or ground lamb, but modern dishes also include chicken. The meat is usually mixed with parsley and chopped onions, then left to marinate with an egg, garlic powder, salt and pepper, celery powder, and sumac before cooking over an open flame. 

2. Chenjeh

This favorite Persian kebab is traditionally made of lamb and cooked over hot coals until the meat is tender, but now many people also serve it with sirloin. Chenjeh was made from the meat of newly slaughtered sheep to ensure it was soft and fresh. Unlike other kebabs, no onion is included in this skewer of meat. 

3. Barg

Strips of these meats are marinated in olive oil, onions, garlic, salt, pepper, and saffron and then grilled. This kebab is usually served with rice and an assortment of vegetables, but it is sometimes served inside lavash bread, topped with vegetables, and drizzled with a yogurt-based sauce.

4. Shish

The shish kebab is the most common kebab found in America, but its roots are Middle Eastern. This Turkish dish features cubes of beef, poultry, or fish that are skewered with vegetables and grilled. The traditional shish kebab features lamb with grilled vegetables on the side.
