Howdy Everyone!

First, the important details.  After many sleepless nights and restless days we finally have our Wagyu Beef steaks back in stock.

This includes:

Ribeye : Market and Signature Grade

NY Strip : Market and Classic Grade

Filet Mignon: Market and Signature Grade

What do the different grades mean?  Well, I’ll tell you.

 

Grading Scale

Most beef is graded as Select, Choice or Prime.  Wagyu is such an exquisite beef that it has a grading scale above prime. The grading is done via ultrasound and the entire carcass receives the same grade.  Remember, marbling in a Ribeye will be more distinct than a NY Strip than a Filet.  

The grading is done on a 10 point scale with 10 being the highest.  You can consider Prime to be 0 to 2 on that scale.  Our facility groups the grades into 4 categories, we offer 3 of those.  We do not carry Reserve.

Market grade is 5 and down. 

Classic grade is 6-7.

Signature grade is 8 - 9.  

Reserve grade is 10+

Quick update about us on the farm.

This COVID-19 stuff has certainly proven for interesting times.  I’ll let everyone make up their own mind on what’s happening but I suggest first and foremost, stay calm.  Nothing is gained from fear.

After that I highly recommend purchasing from quality small farms (like ours).  We certainly have seen a spike in demand and we are very grateful.  Just a reminder, George and myself are 90% of Arrowhead Beef.  He and I personally are involved with every animal that we harvest and every piece of meat that we ship. 

We are one of only a handful of farms in the entire country are are completely vertically integrated and we are likely the smallest one that can boast such a privilege (the other two in our region are 100 times our size).  It makes for a lot of work but we get a lot of satisfaction knowing we control every aspect of our operation.

What does all of that mean?

We have spent the past years growing our herd size and increasing our production capabilities to match greater demand, just like we are seeing now.  And with the added benefit of running our own USDA processing facility, this enables us to expedite more animals as we need.

If there is any silver lining to this madness, it is an increased awareness as folks begin to realize there are (and have been) better quality options for foods in their local areas, outside of mass produced items in giant chain grocery stores.

Cow Shares

I’ve had increased interest asking whether we offer ¼ or ½ cow options.  YES!  We do.  I will put something on the website soon.  We call these Cow Shares. I grew up in Montana and every year my family would purchase a “side of beef” from our local farmer.  It’s an old school thing to do and you bet your bottom dollar we offer it here at Arrowhead Beef.  You get to customize how you get your share cut and packaged, plus you end up spending less than buying the items individually.

Berkshire Pork

I will be adding our Berkshire Pork to the website very very soon as well.  We have actually been raising and selling pork for 5+ years but it has only been available at our local farmer’s markets.  However…I feel it is time to share the bounty with you all as well.  Stay tuned for that to be released soon.
