While we are spending more time at home, please join us enjoying some of our favorite recipes! This recipe is called Herb-ed Potatoes. It's like home-made potato chips, only more moist, healthy, and delicious!

Ingredients:
2 Large Yukon Gold Potatoes (Evenly sized)
2 Medium Jewel Sweet Potatoes (Even in size to the Russet)
2 sprigs Fresh Rosemary (finely chopped)
4 sprigs Fresh Thyme (finely chopped)
3 Medium Sage Leaves (finely chopped)
1/2 cup Olive Oil (Extra Virgin)
1 teaspoon Garlic Salt
1/2 teaspoon Black Pepper (freshly ground)

Instructions:
1. Keeping peel on, slice the Yukon Gold potatoes preferably with a mandolin to produce even slices.
2. Peel the sweet potato and slice with a mandolin. Stack the potatoes, alternating between the Yukon Gold and the sweet potato.
3. Oil a round or oval dish. Fan out the potatoes in the dish in a circular motion.
4. Finely chop all herbs and add them to the olive oil. Add garlic salt and pepper.
5. Brush herb-ed olive oil over the top of the potatoes.
6. Place Potatoes in a 400 degree oven for 1 hour or until potatoes are fully cooked. Serve hot.
