Avocados were first cultivated in Mexico around 10,000 years ago, and the Aztecs made the first guacamole during the 16th century. The name “guacamole” comes from the Aztec word “āhuacamolli,” which means avocado sauce. At first, this sauce consisted of only smashed up avocados. However, soon native South American flavors were mixed in, like onions and tomatoes.

The Aztecs loved it for the taste, but it was also popular because of how healthy and filling the fruit was. Avocados are high in fat and protein, which were hard to get in many ancient diets.

Nowadays, most guacamole isn’t just smashed avocados. It includes ingredients like garlic, cumin, and lime. These flavors are not native to Mexico and arrived there when Christopher Columbus came to the Americas. The Columbian Exchange is partially responsible for the version of this delicious dish we eat today.

In addition, the U.S. government lifted a ban on importing the fruit in the 1990s, causing a surge in availability and popularity.
