Daikon tastes like a radish but resembles a white carrot. If you’re interested in cooking this root vegetable, the following guide can help. Since your favorite grocery store will soon be full of fresh daikon—April is its harvest season—here are some of the most popular ways to prepare it. 

How to Enjoy Daikon 

1. Slow-Cooked 

Daikon can add a dynamic flavor profile to any hearty stew. For an easy meal, chop it up and toss it in a slow cooker with other root vegetables, like carrots, potatoes, onions, and garlic. Sear some cubed chuck meat before adding it to the cooker, and finish with vegetable or beef broth and your favorite seasonings. Six to eight hours later, you’ll have a mouthwatering stew that the whole family is sure to love. 

2. Boiled 

Boiled daikon makes for a healthy side dish, the perfect accompaniment to virtually any main course. After chopping one pound of radish into bite-sized pieces, toss it in a pot with 1 cup of broth, 1 slice of ginger, 1 tablespoon oyster sauce, ½ teaspoon salt, a pinch of white pepper, and a pinch of sugar.

Cover and bring to a boil before turning down the heat and simmering for 20 minutes, or until the daikon is tender. Top with chopped scallion and a few drops of toasted sesame oil—look in the baking aisle or ethnic food section of your favorite grocery store—and serve immediately. 

3. Shredded

Shred one carrot, one white radish, and 1 cup of cabbage. Mix with ¼ cup chopped parsley. For the dressing, whisk ½ cup mayonnaise, 1 clove of minced garlic, 1 tablespoon dijon, 1 tablespoon lemon juice, and 1 teaspoon salt. Pour over shredded veggies and toss to coat.
