4 Tips For Thoroughly Cleaning A Commercial Fryer

1. Turn It Off & Let It Cool Down

Ensure your commercial fryer is completely off and allow it—as well as any lingering oil and grease—to cool before cleaning. Hot oil and grease can severely burn exposed skin, as can hot metal. Wear long sleeves in addition to protective gear to minimize burn possibilities.

2. Remove Obstacles & Debris

Take out baskets, basket hangers, and any other accessories for easy access. Place an oil pan drum, stockpot, or another catch basin beneath the appliance’s drain valve as you dislodge oil, fat, and grease. Allow the oil to drain into the pan slowly instead of hitting it with water to prevent splashes and use a fryer cleaning rod to remove clogs from the drain line.

3. Close the Drain Valve & Fill the Fryer With Water

Add a deep fryer cleaning product as per manufacturer instructions before filling the appliance with cold water. Turn on your heater to “boil out,” or eliminate, remaining oil, fat, and grease deposits. Make sure to wear goggles, a vinyl apron, and nitrile gloves to stay safe.

Run the boiling water mixture for about 30 minutes. Remember that water at extremely high heat can hit you, so use extra caution. After this, turn off the fryer and wait for it to cool down.

4. Scrub & Flush

Use scrub brushes, such as a long-handled brush and fryer coil brush, to deep clean your commercial fryer. Open the drain valve and keep scrubbing as the solution drains. Both brushes help you clean places you otherwise cannot reach. Rinse the commercial fryer with hot water to remove any remaining solution, then wipe the interior with a clean cloth or paper towels. Close the drain valve to finish the process.
