Meal time doesn’t have to be stressful or take a lot of time. In fact, you can end up with a healthy meal for your family in just minutes. These three quick ideas are highly nutritious and cook up in a snap! Try one today.

Spaghetti Squash Idea:

Cut a spaghetti squash lengthwise and scoop out the seeds. Place squash face down on a microwave safe dish with just enough water to cover the bottom of the dish.  Cover and steam for 10-15 minutes or until tender. Use a fork to scoop out the squash in spaghetti-like strands. Toss in a bowl with pesto sauce, cherry tomatoes, salt and pepper, & slivered almonds. Sprinkle with Parmesan cheese.

Vegetable & Egg Idea:

Heat a tsp of sesame oil in a large skillet. Add minced garlic and chopped onion.  Then add 1 cup of your favorite frozen vegetables.  Cook until vegetables are tender. Microwave a pouch of brown rice and add in with vegetables. Push rice and veggies to the side and scramble two eggs. Once the eggs are ready, mix in with rice and vegetables. Add soy sauce to your like and serve!

Bean Tostadas Idea:

Preheat oven to 350.  Lay corn tortillas flat on greased baking sheet.  Smear a spoonful of black or refried beans on top of corn tortillas.  Bake on the middle rack of your oven until crispy.  Meanwhile, chop up your favorite toppings (cabbage, red onion, red/green pepper, tomatoes). Remove from oven and sprinkle with shredded cheese, salsa and chopped vegetables.

Meals in minutes can be simple and satisfying! Don’t be tempted by the drive-thru, cook a quick meal up at home. Your waistline will thank you!
