How Does a BBQ Smoker Work?

Another option is an offset or two-part smoker. This consists of a main cooking chamber, located in a long grated metal barrel, and a firebox. Heat and smoke are generated in the firebox and enter the barrel-like cooking chamber through a small hole. 

BBQA drum smoker consists of a horizontal steel drum with a firebox at the bottom and a cooking rack above it. The base and lid are sealed together to prevent leaks, but vents allow for temperature adjustment. There’s no water pan. Radiant energy from burning charcoal cooks the meat.
