Perfect Poached Shrimp

All you’ll need is two pounds of unpeeled, large shrimp, ice, water, a lemon, peppercorns, bay leaves, and salt.

Fill a large bowl with ice water, and set it aside. Next, combine four quarts of water with lemon and seasonings in a heavy pot, and bring to a boil. Take it off the heat, gently slide the shrimp in the water, and cover. Poach the shrimp until they turn pink—approximately five minutes. Immediately transfer the shrimp to the ice water. Wait an additional 10 minutes before peeling, deveining, and enjoying.

For this meal, you’ll need one-and-a-quarter pounds of shrimp, four ears of corn, an onion, baby red potatoes, lemons, butter, and additional spices and flavorings.

Pour four quarts of water into a large pot. Add a squeeze of lemon, a half cup of Old Bay® seasoning, eight smashed garlic cloves, and an onion cut into quarters. Tie together six fresh sprigs of thyme, and place them in the pot. Cover and bring to a boil. Then, reduce to a simmer.

Add the potatoes, and simmer for 10 minutes. Clean the corn cobs, and snap each in half before adding them to the pot. Simmer for an additional five minutes. Devein the shrimp, and stir them into the mixture, cooking until pink. Transfer to a large bowl, add two tablespoons of butter, and toss to coat. Serve with remaining broth.
