Elkin Guzman Innovation Series

Colombian Finca El Mirador Orange Bourbon - Melazas (Molasses)

$7.59/pound

We are thrilled to have another rare bean from the Elkin Guzman Innovation Series. This Orange Bourbon from his Finca El Mirador plantation located in the Pilato, Huila region delivers both intense flavors and natural sweetness. His innovative processing methods include only harvesting in the morning, dry fermenting, then anaerobic fermentation in tanks with added Melazas (Molasses) to add "energy" to the process. All of this effort yields a bean exhibiting robust flavors and natural sweetness. We respect this young, intelligent, and curious farmer and are proud to bring his high-end offering to you at an affordable price for the Holidays.

Taste: Toffee and citrus fruit, sparkling sweet and tart acidity, silky smooth mouthfeel, nutty lingering aftertaste.

Roast: Medium/Dark to Dark Roast – lengthening the development phase (dry-end to just before 2nd crack) by decreasing energy (lower heat and/or increase fan speed) intensifies the fruit flavors and sweetness. No sugar needed in this cup!

 

Guatemala Acatenango

$6.19/pound

Antigua has farms mostly between 1300–1600 meters, many situated on one of the three main volcanoes, called Agua, Fuego, and Acatenango. The volcanic soil helps lock in moisture, as the region is sunnier and tends to get less rainfall than elsewhere.

Acatenango benefits from rich volcanic soils and a very traditional coffee culture that has carried its regional profile consistently through the generations. Farmers here almost exclusively grow their coffee under a cover of shade.

Taste: The coffees from the Antigua region are sweet, smooth, and good for blending or as mild, lower-acid single-origin offerings.

Roast: These are very hard beans that take a dark roast well.

 

Costa Rica - Diego Abarca - Alto San Juan Micromill

$6.99/pound

Alto San Juan Micromill is owned by an intrepid young producer named Diego Abarca, who took a plot of land from his family’s farm, given to him by his father, and transformed it into a successful business as a coffee producer in his own right. His yields have grown every year, and it has allowed him to attempt more experimentation in addition to having tighter quality control.

Taste: We are continually searching for small producer Costa Rican beans that have similar flavor profiles to our Cafe Vida blend, at a similar price point. Diego Abarca produced this offering that checks both boxes. We know you’ll enjoy the smooth mouthfeel and toffee, chocolate, and berry flavors while supporting an innovative micro-farmer.

Roast: We love this cup most when we pull the beans just at 2nd crack, but its versatility allows you to experiment at all roast levels.

Mexican Chiapas – Finca Nueva Linda – RFA

$5.79/pound

Finca Nueva Linda is a specialty-coffee estate managed by producer Juan Jose Moguel. It is located in the Sierra Madre mountains of southern Mexico, in the state of Chiapas. The farm shares a buffer with the Triunfo Biosphere Reserve, a 50,000-acre tropical cloud forest which helps to temper a changing climate and provide rich soil and clean water. This unique ecosystem produces some of the most flavorful coffee in Mexico.

Juan Jose depulps his coffee at Nueva Linda, uses demucilaging machines to remove the fruit and sugar, washes in clean water, and dries in the sun on patios.

Taste: Mild and nutty with soft citric acidity. This is an excellent bean for your everyday cup of "Joe", and is also a cost effective blender base. Pair it with an Indonesian like Sulawesi for a wonderfully complex taste.

Roast: This versatile bean accepts all roast levels well. Medium roast generates mild tart flavors, while Medium/Dark to Dark roast brings out the nuttiness and gentle mouthfeel.

I have been exploring the world of green coffee beans and have found some excellent ones. Alas, the most excellent Ethiopian varietal (E. guji uraga) I have found to date was simply stunning in its flavor profile! (Roasting info follows…)

Once I got the beans up to temperature (320-340oC) I kept them within that range for 5 minutes before raising the temperature to just below 400oF and held it there until first crack plus 2:30 minutes. I get rapid cooldown by removing the roasting cage (with leather gloves or oven pads) before auto-cooldown cycle starts, and shake it up and down in front of a floor fan on high. (Chaf blows out the garage door…) Then I place a steamer tray (the kind with lots of holes) in front of the fan and slowly pour the beans out so any remaining chaf is blow away from the beans. The floor fan cools the beans within a couple of minutes.
