What Is A Grease Trap?

Restaurants & other facilities with Commercial Kitchens (Nursing Homes, Day Cares, Event Centers, Schools, Certain Government Facilities, etc) are required to have a Grease Trap on outgoing wastewater lines. A grease trap intercepts grease and larger food debris before it can enter the sewer system. All commercial kitchens are regulated by the city and/or county.

1. Eliminate Clogs in Plumbing

Sticky grease adheres to the interior walls of plumbing pipes and can start to collect debris. Over time, food particles, bones, and other contaminants start accumulating on and around the grease patch, eventually causing a clog. The North Carolina state plumbing code requires that "a grease trap or interceptor shall be required to receive the drainage from fixtures and equipment with grease-laden waste located in food preparation areas, such as in restaurants, hotel kitchens, hospitals, school kitchens, bars, factory cafeterias or restaurants and clubs." Failure to comply with this specific regulation can lead to a large fine or sanction or the shutdown of your favorite restaurant!
