Toro comes from the fattiest part of the fish and is recognizable by its marbling; it may be referred to as chutoro (medium fat) or otoro (the fattiest part). Sometimes toro is served with akami, or lean tuna.

2. Salmon (Sake)

3. Mackerel (Saba)

Grilled mackerel is more common on Japanese menus, but when the fish is fresh and in season, it can be used for sashimi. Mackerel’s oiliness means it spoils more quickly than other fish, but it has a smooth, meaty flavor that pairs well with onion and ginger. Mackerel can also be lightly pickled in vinegar to keep it from spoiling.

4. Squid (Ika)

Second only to tuna in popularity, squid – or aka – sashimi uses the mantle or body of the squid. It’s typically cut into thins ribbons that resemble noodles, and it has a mild flavor and firm texture.
