5 Common Types of Oysters

1. Pacific Oysters (Crassostrea Gigas)

Sometimes referred to as Japanese oysters, this variety includes Kusshi, grown in British Columbia, and Marin Miyagi, grown in the Tomales Bay, CA, area. Both are smaller in size, with the Kusshi being meatier in texture and flavor, and the Marin being soft, mild, and creamy. 

2. Kumamoto Oysters (Crassostrea Sikamea)

Another small west coast oyster, Kumamotos are grown in Oregon and Washington state and are small and buttery, with a fresh, almost fruity taste. Like other small, western oysters, these are wonderful raw, and they’re a good choice for new oyster eaters. 

3. Atlantic Oysters (Crassostrea Virginicas)

raw oystersOn the other side of the U.S., Atlantic oysters dominate menus and markets. Common varieties include Wellfleet, Blue Point, Beausoleil, and Malpeque. They are larger in size, with a slightly tougher texture and a salty flavor. They are grown in eastern Canada, Virginia, and the Gulf of Mexico. Beausoleils are the smallest of these eastern oysters, with a nutty taste that is also good for beginners. 

4. European Flats (Ostrea Edulis)

True European oysters aren’t common on American menus, but oyster farmers have tried their hand at Ostrea Edulis—with delicious results. Maine Belons or Westcott Bay Flats are the state-side versions from Maine and Washington state, respectively. They are large, with a meaty texture and rich flavor that complements chowders.

5. Olympia Oysters (Ostrea Lurida or Ostrea Conchapila)

These oysters are tiny, sweet, and slightly metallic in flavor. They are endangered on the West Coast, so they are only farmed in British Columbia and the Puget Sound area.
