Cleaning a fryer may seem overwhelming at first, but with a few positive habits and the proper cleaning routine, soon you and your staff will feel comfortable with the process. 

How to Clean a Fryer

Having the right tools before you start cleaning your commercial fryer is key for safety and convenience. Before beginning the process, you should have gloves, an apron, safety goggles, a drain valve extension, a long-handled scrub brush, a fryer rod to clean debris out of drains, a fryer coil brush for hard to reach spots, and a stockpot or metal bucket to catch the oil. 

Before cleaning, make surecommercial fryer to turn off your thermostat and let the oil cool down to below 150 degrees Fahrenheit. Clear the area of any hanging items or objects being stored nearby the fryer. Attach the valve extension to the fryer drain and drain the oil into the metal bucket. Use the fryer rod to make sure the pipes are free of debris, and wipe up any leftover remnants in the vat.

Use hot water to rinse the fryer, then using the fryer brushes scrub the machine. Rinse and scrub as many times as necessary. Next, fill the fryer halfway with a commercial fryer cleaning product or degreaser. Turn the thermostat back on for twenty minutes, drain the cleaning chemical, and rinse again. 

Maintaining Your Commercial Fryer 

At the end of every day, make sure to clean the fry baskets, and thoroughly wipe down the outside of the fryer. Every time you change the oil, clean the heating element as well. A commercial fryer should be cleaned and boiled out at least once every 3-6 months, depending on usage. Have your fryer inspected professionally at least once a year to catch small issues before they become more significant problems.
