Tourists visiting Hawaii are privy to all sorts of tasty fare. One popular item at many local restaurants is chicken katsu, which is a variation on popular Japanese dishes that feature a piece of fried and breaded meat dressed with sauce and are served with a variety of delicious sides.

Katsu Dishes Are Influenced by Western Cuisine

While katsu originated in Japan, other details are not as clear. Some say it was first served at a restaurant in Tokyo in the late 1800s. At this time, the dish was made using a pork cutlet, which is called tonkatsu. Others say it was part of Emperor Meiji’s bid to incorporate more Western influences in the country as Japan entered the world stage.

How It’s Prepared

Katsu dishes can be made from pork, chicken, beef, and fish. No matter which meat is used to make the dish, the preparation is largely the same.

restaurantsThe meat is pounded to make it thinner, then seasoned with salt and pepper and dipped into flour and egg. This sets up the cut to be coated with panko breadcrumbs and fried. When chicken is the main ingredient, chefs typically use a thigh and add a bit of sweet wine into the coating before deep-frying.

Katsu is usually served with pickled vegetables, miso soup, and rice, in keeping with Japanese cuisine traditions.

How Local Katsu Is Served

Chicken katsu is a favorite among locals and tourists in Hawaii. It’s often served with a sweet and salty katsu sauce and accompanied by macaroni salad and rice in a plate lunch. It can also come with curry. Katsudon is another popular variation, which entails serving the meat with rice and egg.
