If you’re visiting a Vietnamese restaurant, pho is a dish you can’t ignore. Pho is enjoyed around the world, but if it’s your first time, ordering it can seem a bit overwhelming. It’s easier than you may think, though. Learn more about the fascinating history behind this dish and how to order it.

Your Guide to Pho

History

Pho is a traditional Vietnamese dish that has been around since the mid-1880s. It was influenced by Chinese and French cuisine; the French had made eating red meat popular, and the Chinese were introducing a number of unique spices to Vietnamese restaurants. It’s been suggested that the name “pho” is derived from the French soup, “pot au feu.”

vietnamese-restaurant-mamasansMany people believe pho originated in North Vietnam and spread south as Northern Vietnamese residents fled to escape communist rule in the 1950s. Pho grew in popularity during this migration, and chefs in many Vietnamese restaurants gave the dish their own spin.

Types

There are two types of pho in Vietnamese food: pho ga, and pho bo. Pho ga uses a chicken-based broth, and pho ga uses a beef-based broth. Some Vietnamese restaurants serve seafood-based broths, though this is rare. Pho ga only comes with pieces of white chicken. Pho ga can contain different beef cuts, including tendons, meatballs, brisket, and flanks. Vegetarian pho options are also available.

Ordering

When ordering pho, start with the serving size. A “small” or “medium” dish at many Vietnamese restaurants is usually rather large, so consider your appetite. Next, choose the pho ga, pho bo, or a vegetarian option, including your cuts of meat. You can then choose garnishes. These usually include chili peppers, green onion, Thai basil, and ginger. These create a balance of sweet, sour, hearty, and savory and offer countless possibilities. Switch things up each time you dine out for a new experience.
