How to Remove Bones From Fresh Fish

1. Find the Bones

First, you’ll need to know where the bones are. Lay the filet out flat on a cutting surface with the skin side down and feel along the flesh surface. You should find the central pin bones first. They’re the thickest and usually in the middle of fresh fish. Small bones will branch out from these and will be easier to find once you know where the pin bones are.

If you’re using a whole fish, cut the belly and spread it open like a book. You can then find bones branching out from the backbone. This method is ideal if you want to stuff or butterfly the fish.

2. Press to Expose

fresh-fishYou don’t want to butcher the fish to remove the bones. Instead, press the flesh next to the tip of the pin bones so they break the surface. You can move along the filet doing this to expose the other bones. It’s the least invasive method so that your filet is pristine once deboned.

3. Use Pliers

Once the bone tips are exposed, use clean needle-nose pliers to pull the bone out. You’ll have to tug on some bones more than others. Move down the line until you reach the end of the filet. Be patient. It will take time to get the hang of it, and you’ll gradually improve your skills with practice. Once complete, you’ll have a delicious cut of bone-free fresh fish to enjoy.
