The History of Waffles

Waffles trace back to ancient Greece where they were traditionally hard and thin, like a wafer cookie, and made with flour and water. Waffles became popular across Europe and, eventually, America. By then, people ate them soft, like in today's classic breakfast, and paired them with American maple syrup, which was cheaper than imported sugar.

Belgian waffles debuted at the Brussels World’s Fair in 1958 and made the leap to America in 1962. Authentic Belgian waffles differ from regular waffles in their size and texture. They’re usually an inch to an inch-and-a-half tall and has deep, cross-hatched pockets. Because they’re often made with whipped eggs and yeast batter, they’re light and fluffy and tend to be chewy, adding to their height. The deep, coffered compartments are excellent for holding tasty toppings — traditionally berries and cream.
