When you’re craving something succulent and savory, nothing hits the spot like barbecue. This satisfying cuisine takes a unique shape wherever you go. There are a few distinct regional styles that are consistently touted as the best in the United States. Here’s how each popular style of BBQ differs.

Comparing the Different Styles of BBQ

Kansas City

From pork to fish, Kansas City has little preference and will smoke just about any meat. The hallmark of this region’s barbecue is a sweet sauce thick with ketchup and molasses. Double-smoked fatty cuts of brisket, popularly known as burnt ends, were also born here.

North Carolina

North Carolina BBQ is primarily split between two sides — Eastern- and Lexington-style. Both are big on pork, but while the Eastern side uses the whole hog with a vinegar and spice sauce, Lexington serves pork shoulder on a bun with a tomato-based sauce.

South Carolina

Like their northern neighbors, South Carolina most often cooks with pork. Their whole-hog barbecue uses a mustard-based sauce, complete with brown sugar, spices, and vinegar for an added zing. This special blend is affectionately referred to as Carolina Gold.

barbecueTexas

While there are many famous types of Texas BBQ, Central Texas is known for prioritizing the flavor of the meat. Slow-smoked brisket, spicy sausage, and ribs take center stage, with sauces mostly as an optional addition. Meats are served in heaping portions to ensure lasting satisfaction.

Memphis

Memphis prefers pork, whether it’s smoked and pulled or left on a rack of ribs. The city has mastered both wet and dry rubs. Avid BBQ enthusiasts can choose from a tangy tomato-based sauce or a dry rub made with various spices and herbs.

Alabama

Pulled pork and chicken sandwiches topped with coleslaw are common choices for Alabama BBQ, but what sets them apart is their white barbecue sauce. The original creation, best served on smoked chicken, is made with mayonnaise and vinegar.
