One of the best things about pizza is that there’s often enough left over for a second-day meal. To get that fresh-from-the-oven taste, though, you have to know the correct way to reheat a pie. Shun the microwave, unless you’re satisfied with soggy and limp slices. If you desire a hot and crispy pizza, try one of these three methods instead.

How to Revive Leftover Pizza

1. Skillet

If you’re reheating only one or two slices, the skillet is a great choice. In-pan reheating will keep bottoms crispy and heat the cheese and toppings all the way through. Turn the burner to medium. Then, using a nonstick pan, slide in your slices. Add a few drops of water, and cover with a lid or a piece of foil. The trapped-in moisture helps the cheese melt as the bottom crisps. After a few minutes, your pizza should be ready to eat.

2. Oven pizza

If you use the oven to reheat pizza, preheat it to a temperature of 350 degrees. Place slices, or a whole pie, directly on the oven rack, a pizza stone, a sheet pan, or foil. Let pans or pizza stones heat up in the oven before putting your pizza on top. Depending on oven performance, your pie should be ready in 8 to 10 minutes.

3. Broiler

Turn the broiler on low and set the rack 4 to 6 inches from the heat source. As soon as the broiler is hot, slide your leftovers onto a broiling pan. When the cheese starts bubbling and popping, it’s time to eat.
