The PRestauranto’ Boy originated in New Orleans in the 1920s. Bennie and Clovis Martin are credited with the invention of this sandwich during the streetcar conductor strike. In support of the workers, these brothers offered free meals at their restaurant to those on strike. Thus, they leaned toward a satisfying and hearty sandwich that was low cost, easy to prepare, and delicious. The name is said to have come from the expression, “here comes another poor boy,” indicating another striker was coming through to get their free meal. While this sandwich is synonymous with New Orleans and Lousiana culture and cooking, its popularity has grown exponentially, making it readily available in restaurants across the country and worldwide.
