3 Tips for Organizing a Commercial Fridge 

1. Place Meat on the Bottom Shelf

Nothing should sit on the floor of the refrigerator itself. Make sure the lowest shelf sits six inches above the bottom of the unit. Place raw meat products there so when blood or fluids drip from the meat, it will go to the bottom. This will ensure it can be easily cleaned and won’t contaminate other foods. Label shelves with the name of the items to be stored on each one.

2. Leave Space Between Items

To avoid hot spots and keep food at the correct temperature, items should have three to six inches between walls, other items, pans, or containers. Train your staff to practice good rotation habits, and make sure all food is clearly labeled and dated. Older items should be kept in the front, while newer products should be placed toward the back. Pay attention to expiration dates for both cooked and unopened foods. Opened items should be used first, as long as they’re still fresh.

4. Store Produce Properly

Delicate produce can get damaged by commercial refrigeration fans, so make sure to store fruit and vegetables away from them. Produce lasts longer in sealed containers and is less likely to get damaged or wilt.
