Breakfast Time! What to fix? If you’ve been eating some of the same foods each morning, it’s time to shake it up with this deliciously healthy breakfast idea. Any melon will work, and the key is to fill it with a good protein source like cottage cheese and/or yogurt.  The nuts added provide a healthy fat option, which also helps keep us full throughout the morning. 

Remember, just eating a healthy breakfast won’t end in weight loss by itself. It takes balancing calories throughout the day along with physical activity to shed the weight, but starting with a good breakfast for some people helps to control calories later in the day.  

Honeydew Breakfast Delight

  • 1 medium honeydew melon
  • One 5-6 oz container of non-fat, plain Greek yogurt
  • ½ cup low-fat cottage cheese
  • 2 packets of a no-calorie sweetener (Truvia, Splenda, etc.)
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon
  • 2 Tbsp chopped almonds, pecans, or walnuts
  • 2 tsp honey

Directions:

  1. Slice honeydew in half horizontally.  Discard seeds.
  2. In a medium bowl combine yogurt, cottage cheese, sweetener, vanilla extract, and cinnamon. Mix well.
  3. Divide the mixture in half, filling each side of the melon.  Top both side with nuts, and drizzle with honey.
