Buttercream is a versatile and delicious alternative to fondant, and we would love to share our simple recipe with you! This easy recipe will help you create a delicious buttercream that is perfect for cupcakes, layer cakes, and cake pops.
Vanilla Buttercream (American-style) yields about 4 cups
2 sticks (8 ounces) unsalted butter, softened
5 cups (20 ounces) powdered sugar
1 teaspoon kosher salt
2 tablespoon plus 2 teaspoons whole milk or water
2 teaspoons vanilla extract
2 teaspoons or to taste fresh lemon juice
Place softened butter in a bowl of electric mixer with a paddle attachment (or beaters) until smooth. With the mixer off, add 3 cups of the powdered sugar and then milk, vanilla and salt. Mix on slow speed, then increase to medium speed, mixing until smooth and creamy about 3-5 minutes. Gradually add the remaining powdered sugar and mix well until the icing is smooth and of spreading consistency. You may not need all of the sugar, so taste to your liking. If using lemon juice, add now.
