According to the story, when traveling from Italy to France in 1533 to marry Henry II, Catherine de Medici brought the recipe with her. The early version of the macaron was a single biscuit without creme. It wasn’t until the 19th century that the dessert took on its present form. Pastry chef Pierre Desfontaines is believed to have been the first to sandwich ganache filling between two macaron shells.
