Legend tells of a Frenchman, Philippe Mathieu, who owned a sandwich shop called “Philippe the Original” in Los Angeles. According to the family restaurant, Mathieu was busy preparing a sandwich for a police officer when he unintentionally dropped a piece of sliced French bread in the roasting pan’s juices. That pan, incidentally, contained the meat used in the sandwich. Mathieu took a chance and served the policeman the sandwich with the dunked bread. The cop enjoyed his meal so much that he returned for more the following day with his friends. The rest, as they say, is history.
