The fish taco is a quintessential street food and staple of Mexican cuisine. Though some of the specifics may vary, the basic construction is the same: a piping hot piece of grilled or fried fish nestled in a tortilla and topped with a creamy, cool sauce, slaw, and pico de gallo. Here’s a brief look at their history that has crossed countries.

The Contested Origin of Fish Tacos in Mexican Cuisine

Fish tacos originated in Baja California, the small peninsula just south of California in Mexico. However, it’s uncertain which city there made the tacos first, San Felipe or Ensenada. This point of contention came with the upsurge of fish taco stands in both cities in the late 1950s and early 1960s.

Mexican CuisineLong before the term fish taco was coined and marketed, however, it’s believed that the infusion of Spanish and Asian culinary influences in these coastal fishing towns led to wrapping up fish in corn tortillas for quick lunches. Over the years, this quick snack has evolved into the perfect fare for food stands, including various toppings like cabbage, tomatoes, jalapenos, and cilantro

The Introduction to America

The introduction of fish tacos to Americans is credited to Ralph Rubio, who fell in love with them while on spring break in San Felipe, Baja California, in 1974. Hooked at the first bite, he had the idea to start selling them in his hometown of San Diego, California. In 1983, Ralph and his father opened their first restaurant selling fish tacos. Though the idea of seafood in tacos was foreign to the American palate, people quickly came around once they’d tried it, and fish tacos have gained popularity ever since.
