Spring is in the air!  Fresh, whole foods take center stage for your pre-summer slim-down.  After a long winter, fresh finds that keep calories in check are secret weapons to losing weight without feeling deprived.  

Try some of these delicious Spring options for your next meal.

  1. Peas.  With 9 grams of protein per cup this sweet vegetable is a nutrition powerhouse.  Even though it’s starchier than some other vegetables, doesn’t mean you need to forget it.  In fact, peas are good source of vitamins A, B6, C and K,  as well as folate, and riboflavin. With a good amount of fiber too, these can be a great side dish or addition to any green salad. 
  2. Strawberries.  With 3 grams of fiber per cup and an excellent source of Vitamin C, strawberries are a great snack for a Spring day.  You can easily add them to a fresh spinach salad or toss in hearty oatmeal to soak up their great nutrition.
  3. Mushrooms.  With a meaty taste, mushrooms are a great way to get the rich taste like that of red meat, but with only a fraction of the calories.  Try a grilled portobello mushroom burger for your next burger night.  You won’t be disappointed!
  4. Asparagus.  This abundant Spring vegetable is a good source of Vitamin K, folate, and potassium. It also contains an amino acid that acts as a natural diuretic.  Easily prepared by roasting, grilling, or stir-frying, asparagus is simply delicious.  Add a bit of olive oil, salt, and lemon or a splash of balsamic vinegar to make a great addition to your dinner plate.
  5. Apricots. These delicate fruits peak in late Spring and deliver many nutritional benefits.  Apricots supply a good dose of Vitamin A, C, and fiber.  With only 60 calories per fruit, this makes apricots an excellent mid-day snack paired with a small handful of cashews.
