When you visit an Asian restaurant, you’ll find noodles on the menu, as they’re a staple of Chinese cuisine and are prepared in a variety of ways. Chow mein and lo mein are two of the most popular types (“mein” is the Chinese word for noodles). While both are made from the same type of noodle, they're not the same dish. Here is how to distinguish between these two Chinese food favorites.

Chow Mein vs. Lo Mein Noodles

What Are Chow Mein Noodles?

Chow mein noodles are made from wheat flour and egg. They’re deep-fried or stir-fried after being boiled (“chow” roughly translates to “fried” in Chinese), and can range in texture from soft to crispy. They’re typically mixed with a soy-based sauce and a variety of vegetables, including onion, celery, bok choy, zucchini, carrots, and snap peas. While vegetarian chow mein is very popular, the dish can also be served with a meat or protein such as chicken, shrimp, or tofu.

What Are Lo Mein Noodles?

NoodlesLo mein noodles are also wheat- and egg-based, and they’re served with veggies and meat. The difference is that they’re tossed, not fried. The boiled noodles are added after the vegetables, meat, and sauce have been cooked together, and they remain in the pan only as long as it takes for them to heat thoroughly.

How Can You Tell the Difference?

Chow mein noodles can range in texture, but many Chinese restaurants serve them crispy, which is sometimes referred to as Hong Kong style. Lo mein noodles, on the other hand, are always soft. They also tend to be thicker than chow mein noodles, and less greasy since they’re not fried. Finally, chow mein entrees generally feature less meat and veggies, while lo mein dishes are usually heavier with sauce. Both are delicious, flavor-filled options for anyone craving Chinese food.
