Different Cuts of Steak, Explained

New York Strip

Strip steak comes from the short loin of a cow, which is just behind the rib. There isn’t a lot of muscle in this area, so the meat is very tender and juicy. This cut can be fairly large, usually several inches long and about an inch and a half thick. A New York strip steak is usually served without the bone.

Filet Mignon

In general, some people may refer to this cut as a tenderloin, but filet mignon should only be comprised from a very small section close to the ribs, because that’s where the meat is most tender. As one of the most expensive and sought-after cuts, filet mignon is served in fairly small, thick pieces.

T-Bone Steak

A t-bone steak actually includes two different types of meat in one. It’s cut from the short rib of a cow, and contains strip steak meat on one side of the bone and tenderloin on the other. The bone is left in to keep the meat extra juicy and flavorful. This is usually served as a fairly large piece of meat and is cut about two inches thick.
