Not all foods can be stored safely at room temperature because bacteria, like salmonella and E. coli, can grow when conditions fall between 40 and 140° F, known as “the danger zone.” There are several methods to keep perishable items safe for consumption including in-home refrigerators, commercial freezers, and refrigerated shipping. To learn more about the danger zone and how to keep food safe for eating, consult the brief guide below.

When Is Your Food at Risk of Bacteria?

1. While Storing

A lot of perishable items in supermarkets are transported via refrigerated shipping and promptly placed in freezers and cold storage units until purchased by consumers. Once a customer buys a frozen good, it should be quickly placed into a refrigerator or freezer if it won't be eaten immediately. Cold food items shouldn’t be left at room temperature for more than two hours. Otherwise, it becomes susceptible to harmful bacteria.

2. While Cooking

refrigerated shippingFoods that contain meat and poultry require special attention because each have specific cooking temperatures. Sausages, hamburgers, and other ground meats should be cooked to 160° F. Poultry requires an internal temperature of 165° F, while pork and fish should both be heated to 145° F. Use a cooking thermometer in the thickest part of the meat to ensure it has reached the appropriate temperature.

3. While Sitting

Bacteria can also grow within properly cooked foods, and the most common way to get food poisoning is through the incorrect cooling and storing of leftovers. Stay out of the danger zone by putting cooked food in shallow containers and refrigerating it within two hours of preparing. For reheating in the microwave, cover the container with a lid and rotate it several times during the process. The temperature should be at least 165° F before it’s considered safe for eating.
