This delicious and hearty soup will warm you up and fill you up too! They say chicken soup is good for the soul, but Dr. Joy Lunan says it’s also good for your mouth. All that tooth building calcium and phosphorus and gum supporting vitamin C – yum! If you’re craving a no fail chicken soup, you just have to try this one. Your mouth will thank you.

CHICKEN AND WILD RICE SOUP

Ingredients:  1 cup of uncooked wild rice

                       1 tablespoon of olive oil

                       1 cup of chopped onion

                       1 large carrot – peeled + chopped

                       2 minced cloves of garlic

                       3 cups of chicken broth

                       1 ½ cups of potatoes, peeled and cut into ½ inch cubes

                       3 cups of milk

                       1/3 cup of flour 

                       10 ounces of shredded cheddar cheese

                       1 cup of cooked, shredded chicken

                       Last, but not least – Salt and Pepper to taste

Directions:  Cook the wild rice for 45 minutes to an hour, according to the package directions.  Set aside when ready – it should be chewy, but tender. 

Coat the bottom of a dutch oven or a large pot with the olive oil, then saute the onion, carrot and garlic for 3 minutes over medium heat.

Add the broth and potatoes and bring to a boil. Cook on medium to high heat for 10 minutes. Cover, reduce heat, and simmer for 5 minutes or until potatoes are tender. 

Combine milk and flour in a bowl and whisk until well combined. Add this milk mixture to the soup and cook for 5 minutes or until slightly thickened, stirring constantly.

Remove soup from the heat and add the cheese, stirring until it melts.

Add in the wild rice, chicken, salt and pepper. Mix well. Serve with soup crackers if desired. Now comes the good part – Enjoy! :)
