The Origins

The shish kebab originated in Turkey: in Turkish, the word “sis” means sword and “kebab” means meat. The entire name for this authentic Middle Eastern food means “gobbets of meat on skewers.” This cuisine originated before the Turkish Ottoman Empire and was used by nomadic tribes and soldiers. They needed to roast their meat (usually lamb and mutton) over open fires, and they marinated their food before cooking it to tenderize and flavor the meat.
