What Is Butter Mochi?

Mochi is a chewy Japanese dessert made with mochiko or glutinous rice flour. Butter mochi is made with coconut milk, which is not used in traditional Japanese dishes. The Hawaii variation is a delicious blend of Japanese mochi and Filipino bibingka, which is made of cassava. 

What Is Lilikoi Butter-Butter Mochi?

Kahuku Farms created a special twist with their version of this island treat. Instead of using regular butter, like the recipe calls for, they feature their farm grown and hand made lilikoi butter. This delightful concoction is a sweet, tangy, and creamy butter that can be topped on cheesecake, toast, muffins, and pancakes.  And now it’s the star ingredient in the farm’s butter mochi, a delicious labor of love. To ensure everyone gets to enjoy the crispy outer crust of the mochi, the dish is cooked in cupcake molds instead of cake pans.

As with all of their dishes, ingredients are grown, harvested, and processed on the farm. Guests can enjoy a meal while gazing out on the fields in which their food was made.
