Any commercial kitchen needs a grease trap to separate fats and oils from the wastewater disposal system. High oil and fat content can overwhelm a treatment system and result in the release of untreated sewage. It can also cause clogged drains and other plumbing issues. Chris Mote's Pumping Service, a grease trap and septic tank pumping service in Cleveland, GA, discusses some of the most common problems you might experience with this component and how to avoid them.

3 Common Grease Trap Problems

1. Trap Is Full

The grease trap consists of two compartments located between the sink drain and the sewer. Water, fats, oils, and greases (or FOGs) enter the first compartment, where the FOGs rise to the top and harden as they cool. Other debris sinks to the bottom, and the cleaned water can escape to the second compartment through a crossover pipe.

Any remaining FOGs rise to the top, and the cleaned water then flows to the sewer. The hardened FOGs must be removed every 90 days or so as the trap fills, or the sink could back up. If you experience frequent slow drainage or strong odors of grease, consider having it pumped more often or installing a larger trap.

2. Crossover Line Is Clogged

Grease trap in Cleveland, GAGrease and oils are sticky and may adhere to the inner surface of the crossover line, collecting other debris and clogging the pipe. This will cause the first compartment to fill prematurely, and liquids and FOGs may slosh over into the second compartment. A grease trap pumping service will remove the clog and pump the trap clean, allowing it to operate properly.

3. Outfeed Line Is Clogged

A clog in the outfeed line will result in both compartments filling prematurely. If you lift the lid and the contents are overflowing on both sides, but only part of it is comprised of the FOGs layer, you almost certainly have a clog in the trap's outbound pipe. Again, slow drainage and strong odors will alert you to the problem.

The U.S. Environmental Protection Agency (EPA) requires commercial kitchens to schedule regular grease trap pumping and maintenance.
