Not sure what to do with them?  Wrap them up in lettuce leafs with red pepper strips and splash of vinegar.  Add them to a bed of lettuce with your favorite light dressing. Another option is to mix them with cauliflower rice and steamed vegetables and cook in the microwave for a warm “rice” bowl. They also work great in whole-grain wraps or pita pockets, layered with greens, onion, and mustard.
